Dry Furmint

The Evolúció Furmint is a blend of 85% Furmint and 15% Hárslevelű which is another weird but delicious grape which are all hand harvested and fermented and aged in stainless steel which seems to be the theme of the month. The finished wine drinks like an unoaked Chardonnay and a dry Riesling had a baby and is bursting with notes of apricot, green apple, nectarine and pear with vibrant acidity and pronounced minerality.

This Verdejo ages on the lees for 4 to 6 months after fermentation in stainless steel so there is some texture and richness to balance out the vibrant acidity. This wine is organic and has notes of everything from candied lime, white peaches, lemon zest, white flowers and savory herbs.

The Cinsaut is destemmed and fermented in open top concrete vessels and is aged in concrete to show off the delicate nature of this wine. Bright raspberry, tea leaves, pomegranate and subtle licorice notes make this a glass to ponder over.

The wine is fermented with native yeasts in a combination of stainless steel and concrete with a small amount of stem inclusion. The wine only sees a small amount of French oak for a light, bright style of Garnacha that is more acid forward than you would expect. Sour cherry, under ripe raspberry, dried herbs and a slight floral note make this a superb food wine.
